Tips on cooking a boneless leg of lamb with veg?

I'm cooking a roast lamb today and want to put the carrots and parsnips in the same roasting pan. The lamb will take about 2 hours to cook so when do I add the veg. I'm thinking they might dry up if I add them at the beginning
