What can I add to food to preserve the color?

I am not sure if it would work with rose petals but you can try this. When I want things like peppers on broccoli to keep it's color thru another cooking process I dunk them in boiling water for about 30 or 40 seconds then take them out and dunk them in ice water. It helps seal in the color of those veggies.
